Chile Prunes

Duck with prunes / March / 2015


(for 4 servings)

  • 1 apple
  • 1/2 lemon
  • 1/4 kg prunes
  • 1 duck
  • 4 heaped tablespoon onion, finely chopped and fried
  • 1/2 can canned peaches
  • flour
  • Salt and pepper to taste

  • Wash and clean the duck well and leave it in some water with vinegar for two hours. Then dry it, season it and rub it with lemon juice, fill it with the chopped raw apple and cover it with butter, grill it lightly in the oven. Then cut it into pieces and put them in a casserole dish with the fried chopped onion; add the prunes and the canned peaches with half of their juice, all chopped, add salt and pepper to taste. Cook over low heat.
  • Before finishing, if the juice is very clear, sprinkle 1 tablespoon of flour in it. Remove the pieces of duck and the prunes, and make a sauce with the rest to cover the duck pieces.
